I've enjoyed the Soul Eater manga quite a bit, and, while I don't remember much of it now, I did enjoy what I read of a manga called Deadman Wonderland. I'm gonna have to start reading it again. XD

My Favorite [of all time] is Beck [non-color.]

2nd favorite would be the Trigun Maximum series.

Hmm... I really like the manga of Yugi-oh. It's completely different from the anime, and it shows that it hasn't been messed with too much by censorship boards. Bear in mind, I am NOT talking about the card game manga. They have an actual manga which involves death. And perverted thoughts.

2nd fave? Spiral. It's just an all around good manga.
